Ingredients
For the Banana bread
½cupunsalted butter room temperature
1cupgranulated sugar
2large eggs room temperature
3ripe bananas mashed
2cupsall-purpose flour
1teaspoonsalt
1teaspoonbaking soda
For The Streusel topping
4tablespoonbutter cold cut to pea size.
⅓cuplight brown sugar
½cupAll Purpose Flour
¾teaspoonground cinnamon

Instructions
For the bread
Preheat your oven to 325 Fahrenheit, with cooking spray, generously spray a 9x5 bread pan with cooking sprays getting in the sides and crevices. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar on medium-high for 3 minutes. With a rubber spatula, scrape down the sides and bottom of the bowl.
Add the eggs, one at a time, scraping after each addition.
Add the mashed bananas mix on low, until incorporated!
Next add the flour, baking soda, and salt. Mix on the lowest speed just until combined and there are no flour streaks. Don’t over mix!!!
Pour the banana bread batter into the prepped pan. With the back of the spoon, gently even it out, and make sure the batter gets into all four corners. Set aside will you make the topping.
For The Streusel
In a medium-sized mixing bowl, combine the cold, pea-sized butter pieces with the light brown sugar. Use a pastry cutter or your fingers to incorporate the butter into the sugar until the mixture resembles coarse crumbs.
Add the all-purpose flour and ground cinnamon to the butter and sugar mixture. Continue to blend the ingredients until the mixture becomes crumbly and forms small clumps.
Once the streusel topping has reached a crumbly consistency sprinkle over the top of the banana bread batter
Bake in the preheated oven for 55-60 minutes or until a toothpick inserted into the center of the loaf comes out with a few moist crumbs attached. Baking times may vary, so keep an eye on it after the 55-minute mark.
