Who remembers the movie Parent Trap with Lindsay Lohan? Well, that movie introduced me to what might be the most classic combo of all time. Peanut butter and Oreo. I smashed these two combos to create these Peanut Butter Oreo Bars.

- Unsalted butter- I always use unsalted butter. It helps me control the amount of salt in my recipes.
- Eggs- You will use a 2. Make sure they are at room temperature.
- Creamy peanut butter- I love using jif, but whatever brand you prefer is great!
- Oreo’s – I bought a regular size package, and you can use regular or double stuf.

- Use a high quality light color pan. This is so important. It will ensure that you don’t burn the sides of your blondies. I get my pan here
- Preheat your oven for 30 minutes before you start baking. This will ensure that your oven is up to temp.
- Use extra Oreo’s if you are an Oreo connoisseur!
Step by step – Peanut Butter Oreo Bars
Here is how to make the cream cheese layer. This recipe needs an electric hand mixer. You can use either a stand mixer with a paddle attachment, or a hand mixer. I used a hand mixer. Here are the bowls I used.
Step 1: Preheat the oven Preheat the oven to 350 F. and line an 8×8 square baking pan with parchment paper and spray the parchment paper with cooking spray. Set aside.
Step 2: Whisk the butter and sugar. In a large bowl, whisk the melted butter and granulated sugar until well combined. Whisk in the peanut butter vigorously for about 30-45 seconds.
Step 3: Add the egg. Add the egg, egg yolk, and vanilla. Whisk them together.
Step 4: Fold in the dry ingredients. With a rubber spatula. Fold in the flour, salt, baking powder, cinnamon and crushed Oreos all at once.
Step 5: Transfer the dough to the pan. Evenly press the dough into the prepared pan.
Optional: You can swirl in melted dollops peanut butter, and then place whole and/or slightly crushed Oreos on top for a finished looked.
Step 6: Bake.Bake for 22-25 minutes. Mine took about 24 minutes, but my oven tends to run a little cool.
FAQ
What if I don’t have a 8×8?
You can use a 9×9. If you want to use a 9×13, make sure to double the recipe.
How do you get those sharp cuts?
I use a sharp knife and I clean it after every cut. I also make sure that my dessert is cold.
Can I turn these into cookies?
Yes, you just need to use cold, cubed butter. Use a stand sized mixer fitted with the paddle attachment to help cream the butter and sugars.
Storing
These Peanut Butter Oreo Bars can be stored in an airtight container or ziplock bag for up to 5 days at room temperature. You can also place them in an airtight container in the fridge for up to one week.
Freezing
You can freeze them in an airtight container or a ziplock bag for up to 6 months.

- 1 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup slightly crushed Oreos about 4 cookies, plus more for garnish
