Grocery list
I have added some of the ingredients you will need, but might now have on hand. For a full list of ingredients, check out the recipe card below!
- Butter: I used unsalted, and make sure it is melted, and not hot, warm is fine, but not too hot!
- Light Brown Sugar: Adds sweetness and moisture, contributing to the soft and chewy texture of the blondies.
- Granulated Sugar: Adds sweetness and helps create a slightly crispy crust on the outside of the blondies.
- Eggs: make sure they are room temperature!
- Vanilla Extract: Adds flavor and enhances the overall taste of the blondies.
- Cornstarch: Helps create a soft and tender crumb in the blondies.
- Baking Soda: Acts as a leavening agent, causing the blondies to rise slightly during baking.
- Salt: Enhances the flavors and balances the sweetness in the blondies.
- All-Purpose Flour: Provides structure and forms the base of the blondies.
- Semisweet Chocolate Chips: Adds delicious chocolate flavor and gooeyness to the blondies.
- Oreo Cookies: Adds a delightful crunch and the classic Oreo cookie flavor to the blondies.
Note: Make sure to have an 8×8 baking pan and parchment paper on hand as well.
Tips for making the batter
I use my kitchen aid which I got from here. Here is the pan I used.
- Use Room Temperature Ingredients: To ensure even mixing and a smooth batter, make sure the eggs are at room temperature. You can take them out of the fridge about 30 minutes before starting the recipe.
- Properly Measure Flour: For accurate results, spoon the flour into the measuring cup and level it off with a flat edge. Avoid scooping the flour directly from the bag, as it can lead to excess flour and a dense texture.
- Chop Oreo Cookies into Chunks: Instead of crushing the Oreo cookies into fine crumbs, chop them into small chunks. This way, you’ll get delicious cookie pieces throughout the blondies, adding both flavor and texture.
- Line the Baking Pan with Parchment Paper: Using parchment paper with metal binder clips will make it easier to remove the blondies from the pan and cut them neatly into squares once they are baked.
- Don’t Overmix the Batter: When adding the dry ingredients to the wet mixture, be careful not to overmix. Overmixing can lead to tough blondies. Fold the dry ingredients in gently just until combined.
Overall baking tips
- Check for Doneness: Oven temperatures can vary, so keep an eye on the baking time. The blondies are ready when the edges are lightly golden, and a toothpick inserted in the center comes out with a few moist crumbs.
- Cool Completely Before Cutting: Allow the blondies to cool completely in the pan before cutting into squares. This will prevent them from crumbling and ensure clean cuts.
- Melt Butter Carefully: When melting the butter, do it slowly and in short bursts in the microwave or over low heat on the stovetop. Avoid overheating, as it can cause the butter to separate and affect the texture of the blondies.
- Add Mix-ins Gradually: If you’re adding extra mix-ins like nuts or white chocolate chips, fold them into the batter gently and gradually. This will ensure an even distribution of the add-ins throughout the blondies.
- Use High-Quality Ingredients: For the best flavor, use high-quality butter, chocolate chips, and vanilla extract. The better the ingredients, the tastier the blondies will be!
- Cool Before Removing from Pan: Let the blondies cool in the pan on a wire rack. This will help them set and prevent them from becoming too fragile when transferring them to a cutting board.
Storing and Freezing
To store Oreo Blondies, allow them to cool completely and then place them in an airtight container at room temperature for up to 2-3 days. If you have leftovers and want to keep them longer, you can freeze the blondies in a freezer-safe container or resealable bag for up to 2-3 months.
Freezing – Oreo Blondies
To freeze, ensure they have cooled completely. Freeze the blondies on the baking sheet for about 1-2 hours until they are firm, and then transfer them to a resealable freezer bag or an airtight container, separating each layer with parchment paper to prevent sticking. Store the frozen blondies in the freezer for up to 2-3 months, and when ready to enjoy, thaw them in the refrigerator or at room temperature.
Finally, how to cut: Use a sharp knife, wipe it clean between cuts, and start by cutting the blondies in half to make two equal rectangles. Next, cut each rectangle in half again to create four squares, and finally, cut each square diagonally from one corner to the opposite corner to obtain 16 perfect squares in total.

For the blondies
- ¾ cup butter melted and cooled
- 1 cup light brown sugar
- ½ cup granulated sugar
- 1 large egg room temperature
- 1 large egg yolk room temperature
- 1 Tablespoon pure vanilla extract
- 1 teaspoon corn starch
- ¼ teaspoon baking soda
- ¾ teaspoon salt
- 1¾ cup all-purpose flour spoon and leveled
- ¾ cup semisweet chocolate chips
- 12-14 Oreo cookies chopped
Instructions
- Preheat your oven to 350°Fahrenheit. Line an 8×8 baking pan with parchment paper using metal binder clips to hold down the sides. Set aside.
- In a microwave-safe bowl, melt the butter, and let it slightly cool. Using a whisk, add the light brown sugar and granulated sugar, whisking until well combined and smooth. The batter will start to grow in volume.
- Add the egg and whisk vigorously for around 20 seconds, then add the egg yolk and repeat. Mix in the vanilla extract just until combined.
- Using a rubber spatula, add the flour, baking soda, cornstarch, and salt. Gently fold until the dry ingredients are just combined.
- Gently fold in the chopped Oreos and chocolate chips.
- Pour the blondie batter into your prepared pan, spreading it evenly for a finished look. For extra appeal, sprinkle additional chocolate chips and chopped Oreo cookies on top.
- Bake the Oreo blondies for 30-35 minutes, depending on your oven. Mine took 35 minutes. The blondies are ready when the edges are lightly golden, and a toothpick inserted in the center comes out with a few moist crumbs.
- Let the blondies cool completely in the pan before cutting into squares and serving.
