Step 3: Cook your sugar. in a medium size sauce pan, combine ⅓ cup of water, corn syrup, and sugar. Do not mix, and bring the mixture to a roaring boil over medium heat. Let the mixture boil for 2 minutes. Make sure the sugar dissolved.
Step 4: Add the sugar to the kitchen aid. Turn the stand mixer onto medium speed and carefully pour the hot sugar mixture into the gelatin mixture. This should take about 1-2 minutes. Once the sugar mixture is added, beat on high for 12 minutes, until the mixture is fluffy and forms stiff peaks. Add in vanilla extract and beat on low until just combined.
Step 5: Add to the prepped pan. Pour the marshmallow mixture into the prepared baking pan, using a greased spatula to smooth the top.

Tools and things I used to make Fruity Pebble Marshmallows
- Saucepan: A medium-sized saucepan is required to heat and melt the sugar mixture.
- Electric Mixer: An electric mixer, either a stand mixer or a handheld mixer, will help whip the marshmallow mixture to achieve the desired fluffy consistency.
- Baking Pan: A square or rectangular baking pan, typically around 8×8 inches, will be used to pour and set the marshmallow mixture.
- Offset Spatula: An offset spatula is useful for smoothing and leveling the marshmallow mixture in the baking pan.
- Parchment Paper: You’ll need parchment paper to line the baking pan, making it easier to remove and cut the marshmallows once set.
- Knife or Pizza Cutter: A sharp knife or pizza cutter will be used to cut the marshmallows into desired shapes and sizes.
- 10.Storage Container: Finally, you’ll need an airtight container or resealable bags to store the homemade marshmallows and keep them fresh.
Storing and freezing
To store these Fruity Pebble Marshmallows, ensure they have cooled and set completely at room temperature. Cut them into desired shapes, and place the marshmallows in an airtight container or resealable bags, ensuring a tight seal, and store them in a cool, dry place at room temperature. They will remain fresh for about 1-2 weeks when stored properly.
Freezing – Fruity Pebble Marshmallows
For freezing, arrange the marshmallows in a single layer on a parchment-lined baking sheet and freeze them for 1-2 hours until firm. Then transfer the frozen marshmallows to airtight freezer bags or containers, removing excess air, and label them with the date and contents. Frozen marshmallows can be stored for up to 3 months. When ready to use, thaw them in the refrigerator overnight or at room temperature for a few hours. Keep in mind that freezing and thawing may slightly affect the texture of the marshmallows, but they can still be enjoyed.
