This week on Cake Babe, we are entering everything we need to know about sprinkles. Starting with Birthday Cake Cookies. The base of these cookies have a soft cake like texture, and it has a cake batter extract in it. Filled with tour favorite rainbow sprinkles. With a cream cheese swirl on top, and then doused in, of course, more sprinkles!!!

Why these Birthday Cake Cookies?
Let’s get into the nitty gritty reasons why you need to add this to a birthday party, a birthday breakfast or honestly, just because sprinkles make everyday better.
- Soft and chewy – When I say soft and chewy, but like in a cakey way, it’s like a cake and cookie meet for the first time and they decided to have a baby.
- Great birthday treat – This doesn’t have to just be for a birthday, but for my birthday week I made them and THEY WERE BOMB. The bright colors made a great celebration.
- Rainbow sprinkles – I use rainbow jimmies, that I found at Walmart.
- Easy and fun – this recipe doesn’t take much to create and it’s a pretty fun recipe to do as well!
- FLAVORFUL – this cake is very flavorful from the cake batter extract that I found here and here is another brand
What you’ll need to make Birthday Cake Cookies
Here, are some ingredients that you will need for this recipe that you may not have in your pantry. For a full list, check out the recipe card for below.
- Unsalted butter – you will use some for the cookie and for the frosting on top.
- Cake batter extract – There are two brands, this is the one I used, and if you can’t find it, you can order a similar brand here
- Vanilla extract – this one is my favorite, but if you want a cheaper one, I recommend using this one.
- Rainbow sprinkles – I used these jimmies, but you can use whatever jimmies you like! At the bottom of my blog, there is a list of all my favorite sprinkles.
- Cream cheese – I used full fat, and highly recommend using full fat. I love Philadelphia, and the great value brand.
- Powder sugar – this is used for the frosting.
Step By Step – Birthday Cake Cookies
Next, I have made a detailed list on to make and bake your Birthday Cake Cookies. I use my kitchen aid which I got from here.
Step 1: Prep. Preheat your oven to 350 F. Line a baking sheet with parchment paper. Set it aside.
Step 2: Cream your butter and sugar. In a bowl of a stand size mixer fitted with a paddle attachment, cream the butter and granulated sugar until light and fluffy on medium high speed. About 3 minutes.
Step 3: Mix in your egg and flavoring. With the mixer on medium speed, add the egg, and and beat for 30 seconds. Add the cake batter extract, vanilla extract, and mix just until combined.
Step 4: Add the dry ingredients. On the lowest speed, add the flour, baking powder, baking soda and salt. Mix just until the flour streaks disappears. Do not over mix.
Step 5: Scoop. Use a large cookie scoop to portion out 6 equally sized cookie dough balls, or weigh them out to 4 ounces each.
Step 6: Get ready to bake. Place all 6 cookies on the sheet pan about 1 inch apart. With the bottom of your hand, gently smush down the top.
Step 7: Bake. Bake the cookies for 11 minutes, let them cool before transferring to a cooling rack to finish cooling.
Step by step – Cream cheese frosting
Step 1: Cream the cream cheese and butter. In the bowl of an electric mixer, combine the butter and cream cheese. Cream on medium speed for about two minutes. Scrape down the sides and bottom of the bowl. Beat again for 2 more minutes.
Step 2: Add and mix. With the mixer on low speed, add the powdered sugar, followed by the, cake batter extract, vanilla, and salt. Beat on low just until mixed. Then turn the mixer to medium high speed and beat the mixture for 2-3 minutes.
Step 3: Frost. With a plastic bag or a piping bag, cut a medium size hole and frost the top of the cookie and decorate with extra sprinkles.
Expert Baking Tips
- Use a high quality, light color pan. This is so important. Using a light colored pan will result in a lighter bottom and a non burnt cookie
- Preheat your oven for 30 minutes before you start baking. This will ensure that your oven is actually up to temp.
- Spoon and level your flour to get a more accurate measurement.
- Frost your cookies cool, if the cookies are warm while you frost them, the frosting will melt off and you will a mess!
FAQ
What if I can’t find cake batter extract?
My local Walmart had it, but amazon had some. You can always sub vanilla extract, it will have a slightly different taste, but will taste just like a regular sugar cookie.
How many cookies does this make?
This recipes make 5 large cookies, I suggest doubling the recipe if you need more than 5!

Birthday cake cookies
- ½ cup unsalted butter chilled and cubed
- ¾ cup granulated sugar
- 1 egg at room temperature
- ½ teaspoon cake batter extract
- ½ teaspoon vanilla extract
- 1 ½ cup all purpose flour
- ½ teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 3 tablespoon rainbow sprinkles

- 3 ounces cream cheese softened
- 4 tablespoon unsalted butter softened
- ¼ teaspoon cake batter extract
- 1 cup powder sugar
- 3 tablespoons rainbow sprinkles
- Pinch of salt

For cream cheese frosting
- In the bowl of an electric mixer, combine the butter and cream cheese. Cream on medium speed for about two minutes. Scrape down the sides and bottom of the bowl. Beat again for 2 more minutes.
- With the mixer on low speed, add the powdered sugar, followed by the, cake batter extract, vanilla, and salt. Beat on low just until mixed. Then turn the mixer to medium high speed and beat the mixture for 2-3 minutes.
- With a rubber spatula, fold in the rainbow sprinkles.
- Once the cookies are completely cooled, and no longer warm, frost the cookies.
- With a plastic bag or a piping bag, cut a medium size hole and frost the top of the cookie and decorate with extra sprinkles.

Make these!!! The only thing I changed was making them 2 ounce cookies rather than 4 ounce because I have little ones at home. I these are soft and not too sweet but just perfect! My new go to cookie!!!
