Birthday Sprinkle Marshmallows – soft and fluffy homemade marshmallows filled with rainbow sprinkles and coated in sugar.
Today is day one of my birthday week and I’m starting strong with this new Birthday Sprinkle Marshmallows! They will have you wanting to celebrate every little party for the rest of your life. Everyone knows every birthday party needs a rainbow to it, and that is why I created this recipe.

Why Birthday Sprinkle Marshmallows?
If you have never had a homemade marshmallow, you have been missing out. They are so easy, and tasty!
- Easy recipe – I’ve said it a million times by now, these recipe is so easy, it takes 15 minutes to make, and it needs to set for at least four hours.
- Goes with anything – you can add it to hot chocolate, dip them in chocolate, and eat them plain!
- Fluffy – the are fluffy and squishy, all well melting in your mouth!
Grocery Store Check List
Next are a list of ingredients that you might not have. For a full list check the ingredient card down below.
- Unflavored gelatin. I used unflavored and by a packet of 4. I bought mine
- Rainbow Sprinkles. I used two kinds I used jimmies and non parallel’s
- Light corn syrup. Dark corn syrup will change the flavor and the color.
- Powder sugar. Unlike my cake recipes, you do not need sift it!
Step by step instructions
Onto the instruction portion of the recipe! Here, I will add instructions and helpful notes.
Step 1: Prep your pan. Line a 9×13 inch baking dish with plastic wrap and spray with non-stick cooking spray. Set aside.
Step 2: Bloom your gelatin. ⅔ cup of cold water in the bowl of an electric mixer fitted with the whisk attachment, and sprinkle gelatin on top of water to soak. This is will take about 5 minutes.
Step 3: Cook your sugar. in a medium size sauce pan, combine ⅓ cup of water, corn syrup, and sugar. Do not mix, and bring the mixture to a roaring boil over medium heat. Let the mixture boil for 2 minutes. Make sure the sugar dissolved.
Step 4: Add the sugar to the kitchen aid. Turn the stand mixer onto medium speed and carefully pour the hot sugar mixture into the gelatin mixture. This should take about 1-2 minutes. Once the sugar mixture is added, beat on high for 12 minutes, until the mixture is fluffy and forms stiff peaks. Add in vanilla extract and beat on low until just combined.
Step 5: Add to the prepped pan. Pour the marshmallow mixture into the prepared baking pan, using a greased spatula to smooth the top.
Step 6: Cover. To cover the top, lightly spray the top of the marshmallow with cooking spray, lay a piece of plastic wrap on top making sure it completely covers the top. Press down the top to lightly seal candy.
Step 7: Rest. Allow the marshmallow candy to rest for at least 4 hours or overnight. With cooking spray, spray clean scissors and cut the marshmallows into squares. You can make them however big or small you want. Then dredge the marshmallows lightly in the colored sugar mixture.

Can I use a cookie cutter for fun shapes?
Yes! Just make sure to spray your cookie cutter so the marshmallow doesn’t stick.
Can I add food coloring?
Yes, my favorite brand is Amerigel, here is great starter pack.
Can I use a 9×13?
Yes! Just double the recipe! you can find my 9×13 pan here
Storing and freezing
Store these Birthday Sprinkle Marshmallows at room temperature covered in plastic wrap for up to 5 days.

These marshmallows don’t freeze at all!
How to serve: Make sure they are always sealed from the air to prevent them from becoming stale.

Birthday Sprinkle Marshmallows
Ingredients
For the Marshmallows
- ⅔ cup cold water
- 3 packages unflavored gelatin each package is .25 ounces
- ½ cup light corn syrup
- ⅓ cup water
- 1 ½ cups granulated sugar
- 1 tablespoon vanilla extract
- ¼ cup rainbow sprinkles
- ½ cup powdered sugar
- Optional: melted white and dark chocolate for dipping.
Instructions
For the marshmallows
- Line a 8×8 inch baking dish with plastic wrap and spray with non-stick cooking spray. Set aside.
- Place ⅓ cup of water in the bowl of an electric mixer fitted with the whisk attachment, and sprinkle gelatin on top of cold water to soak. This is will take about 5 minutes.
- While gelatin is soaking, in a medium size sauce pan, combine ⅓ cup of water, corn syrup, and sugar. Do not mix, and bring the mixture to a roaring boil over medium heat. Let the mixture boil for 2 minutes. Make sure the sugar dissolved.
- Turn the stand mixer onto medium speed and carefully pour the hot sugar mixture into the gelatin mixture. This should take about 1-2 minutes. Once the sugar mixture is added, beat on high for 12 minutes, until the mixture is fluffy and forms stiff peaks. Add in vanilla extract and beat on low until just combined.
- Pour the marshmallow mixture into the prepared baking pan, using a greased spatula to smooth the top.
- To cover the top, lightly spray the top of the marshmallow with cooking spray, lay a piece of plastic wrap on top making sure it completely covers the top. Press down the top to lightly seal candy.
- Allow the marshmallow candy to rest for at least 4 hours or overnight. With cooking spray, spray clean scissors and cut the marshmallows into squares. You can make them however big or small you want. Then dredge the marshmallows lightly in the colored sugar mixture. You can also dip the marshmallow in melted white or dark chocolate and sprinkle with some extra sprinkles. Store in an airtight container, or if you are like me, eat them right away!
